Parenting

Why oh why does parenting have to be so hard? When you throw a special need into the mix, all hell can break loose!
Aiden was recently diagnosed with ADHD. We've tried behavior modification techniques, change in diet (completely eliminated milk and drastically reduced his intake of sugar and artificial colors), and went to parenting classes. Nothing was working and his focus at school was getting worse, so we talked to his doctor some more and decided to start medication, Ritalin. He is on a very low dose in the morning to start, with the possibility of adding an afternoon dose when he goes back to school (he's on Winter Break).
So we started the medicine a couple of days ago and we've noticed a huge difference in his focus and behavior! HOWEVER we had a VERY difficult day today. The kind of day that made me need to run away to Target by myself after Ben got home from work.
I just don't know what else to do! I feel like an absolute failure as a mom! I don't want him to feel like he has to act out to get attention, and I know he doesn't like acting that way, but know he doesn't know what else to do.
I will keep searching for ways to help him and myself with dealing with this obstacle!

Betty Crocker? Umm...I think NOT!!

So I am not a baker, AT ALL! My kind of baking requires a package of dry cookie ingredients and I can add the egg and oil, even then I usually manage to mess them up somehow!
Well tonight I decided that we would make gingerbread men cookies for Christmas. I got the packaged dough that I didn't even need to add anything to, piece of cake right? WRONG!! Who knew you'd need a rolling pin to roll out the dough? Not me! I don't own one!
So I get the counter all floured up (luckily I actually had four) and break open the package. I read the directions, ROLL THE DOUGH!?! What am I going to do? I know! A glass! That's round right?!? So I flour up the glass (I have some knowledge of baking) and get set to "rock and roll", but what happens? The darn dough sticks to the darn glass! Ugh...so our gingerbread men came out a little lumpy and all different thickness levels, but they sure taste good!
And the most important part? Aiden had a blast cooking with mommy! He LOVED getting flour all over the kitchen, AND mom LOVED it too!! Now I need to go REclean the kitchen!




Little of this, little of that...

So I haven't blogged in a couple months. Mainly because I only have a few followers and I feel like it doesn't matter anyway. BUT I want to get back to blogging again, so here I go...whether there's anyone who wants to hear from me or not!
So where do I start, it's been so long?!

Let's start with Aiden's 5th birthday in September. I can't believe my baby is 5! Where has the time gone? Anyway, he had a BLAST celebrating with friends at Brandi Fenton Splash Pad. It was the PERFECT place to have a birthday party! Well, minus the bees of course. Note to self, no Eegee's at a park!!




Now for Halloween, my crazy kids... Aiden is in a Toy Story kick so he wanted to be Woody, and of course my sweet angel, Addison! But her halo kept falling off!



Then we had my sister's baby shower. I can't believe my "baby" sister is having a baby in just a few short weeks!! It was a great shower and I made my first ever diaper cake! It was only 2 tiers because I was getting frustrated, but it was a pretty good start, especially since I am NOT a crafty person whatsoever!!

Now we're up to Christmas!! We've had so much fun getting ready for Christmas. This holiday truly does get more fun when you have kids. Aiden is so excited for Christmas and Santa he can hardly stand it! Even though Daddy may use "Santa" to his advantage a little too much! :)
Tonight we made gingerbread men cookies and Aiden had a blast. When asked what his favorite part was? Doing the sprinkles and eating them was his response! Gotta love 5 year olds!

Updates!


Wow am I behind in posting?! Being back at work has really kept me busy. Not to mention having 2 kids running around, one of which has recently started kindergarten!

My big boy is doing so well in kinder, and he absolutely loves it! Of course it probably doesn't hurt that his teacher is gorgeous!! My mom saw a picture of her on Facebook and her comment was "they don't make teachers like they used to!" I asked her, "what am I, chopped liver!?!"


I started a new year in school as well and we're having a great time so far! I LOVE my classroom! It's very homey and welcoming!



My wonderful husband brought me flowers for my first day of school! :)



Last update, I am on my 5th week of doing Weight Watchers! I have lost 8 pounds so far, 1 more pound until my first 5% goal! It's nice to be able to see results! I am a planner so I plan out my meals ahead of time, always take my lunch to work, and track ALL of my points! I lost 2.4 pounds this past week and had a party AND went out to dinner for Ben's birthday! I'm so excited that I'm doing so well!!

Another pound down!!

At Monday night's meeting I found out I lost another 1.4 pounds! So exciting! It's coming off slow, but at least it's coming off. I even got up 30 minutes early this morning and did a mile on the eliptical! It was HARD to get up early and get going, and now I'm exhausted, but I feel good about myself. That's the main thing right? Feeling good about yourself?
I sure hope I can keep it up, my motivation seems to be short lived. I just really want to be thinner, healthier, and happier!
I'm getting much better at using my points wisely. I feel like I've eaten all day, and I still have 1.5 points left. I also had a point left over yesterday too.
Any more suggestions for me?

End of week 2

So it's the end of week 2 on WW, but haven't weighed in yet. I'll weigh in at the meeting tomorrow. I'm really nervous, don't know if I did as well as the first week. But I have incorporated some exercising in my plan now! I'm starting slow, doing the eliptical machine we have at home. I did also order 2 DVD's by Jillian Michaels doing the 30 day shred. So let's see how much I can shred!

My new favorite snacks are:
light, whole wheat english muffins
WW yogurts (only 1 pt)
94% fat free popcorn
cucumbers
fruit salad
whole wheat pitas, or cut up and made into pita chips to dip in homemade salsa
I'm still trying to find other snacks that are good for WW, if you have any suggestions I would love to hear them!!

3 pounds!!!

I lost 3 pounds during my first week being back on Weight Watchers!! I am so proud of myself! I was so sure I was going gain this first week because I am definitely still getting used to the difference in eating!
I even went out to dinner this week, I just made sure to save up my points before hand. WW gives you 35 "extra points" for the week that you can allocate how you wish, most people just add 5 extra points on to their day. I saved up those points plus my points for that day, and I had 32 points to "spend" to splurge on my meal out! Man, did I SPLURGE!!! We went to BJ's new restaurant on Broadway and Craycroft and they are my new favorite restaurant!!
I don't know if my meal was really that amazing because the food was amazing, or if it was because I had worked so hard during the week, but it was AMAZING!!
My hardest thing is snacking. I noticed that I am using a lot of points on snacks because I'm hungry throughout the day. I want to have some snacks that are low in points, but are also low in preparation...any thoughts??

Weight Loss Journey


I have decided that I'm sick of being overweight. This past week I re-joined Weight Watchers. That's right, I'm a previous WW drop out, but this time I'm determined to succeed!
I need to healthy and happy for my kids. They deserve a healthy mommy who is going to be around forever!!
Not only am I counting points for what I eat, I'm in search for healthy and easy recipes to cook for my family. My family needs to be eating healthier, not just me. As I search I will post any recipes I find here for everyone to enjoy! If you have any recipes, I would love for you to share! I do still plan to have freezer cooking days, so my recipes also need to be able to freeze well, or keep for a few days in the refrigerator. How is this possible all while working full time? Well I don't know that yet, but I'm going to figure it out! :)
This time around in the WW world I have a friend who as joined for support as well! It is so nice to be able to go with someone who understands what I'm going through. I also love that I can text her and she can text me before thinking about ruining our day on something frivolous! Nicole is the best WW partner I could ask for!
Of course I want to be healthy and feel good, but I definitely want to LOOK good as well! My goal is to lose 40 pounds! I'm not going to give myself a timeline because I will just be disappointed if I don't make it, but that doesn't mean I'm going to slack off though! Any helpful hints and tips would be much appreciated!

The FAT girl


Whenever you go to the party there are always "those" girls: The skinny ones, the trendy ones, the popular ones, and the fat ONE. There is usually always ONE fat girl there, and the other night I was the FAT girl at the party! That night I cried myself to sleep because I don't want to be the fat girl anymore, thus I am starting a new diet and exercise goal!
I am searching for healthy, protein rich dinner recipes online and am finding a few I'd like to try. My husband is very picky and most of the recipes I'm finding online are fancy-like or have too many ingredients that he just won't eat, so I'm asking all you blogging ladies out there, what is your healthiest, most normal recipe that you make??
Obviously we're going to be eating a lot of chicken now, but do you have any favorite lean beef recipes I should try?
What should I eat for snacks? I did WW in college, but can't remember all of the ins and outs of snacking, and I'm sure things have changed in the past 7 years!

No more babies :(

No more babies in my house!! Addison is ALMOST officially walking! She did a lot of walking on her own today! We have been working with her, holding her hands while she walks, and she has been using the walker more. Today she kept letting go of the walker and would take a good 10-15 steps on her own, walking toward Ben! Soo cute!! I am so excited because we have been waiting for this milestone for quite some time. She'll be 17 months next week!
Even though this is an exciting time, it is a little sad as well. This means that I will no longer have any more babies around! Of course they will always be my babies, but they are growing up too fast!
Addison is on her way to 2 years old and becoming a toddler now that she's walking, and Aiden is starting kindergarten in August! Where does the time go?

My sister's pregnant!

So my baby sister (even if she is 25) is having a baby of her own! She found out last week and is due sometime in February! So excited to be an Auntie!! She's now able to understand why I always told her she couldn't pay me enough to carry her children! She used to try to tell me she was going to pay me $1 million to carry her children...all I ever did was laugh! I hated being pregnant! Twice was enough for me! ;)
She's really hoping for a girl, so we'll see! I can't wait for Aiden and Addison to have a cousin!!

My cooking day!

So I did it! :) I spent the whole morning cooking this morning!
I started by chopping up all the onions and bell peppers I needed. Then I divided the ground beef up for all the meals I was making.
I started with the roast first because I needed to get that in the crock pot. That is going to become shredded beef for 2 different meals, BBQ Beef Sandwiches, and burritos.
Then I started on the chili. While I was sauteing the veggies and ground beef for the chili I started browning the ground beef for the taco meat. While all of that was cooking I separated the last of the ground beef into 2 different bowls for my meatloaf and meatballs.
I seasoned both batches of the ground beef, molded one into the meatloaf, and then made the balls and threw it all in the oven!
Then I finished off the chili to let that simmer for awhile and finished the taco meat.
Finally I chopped all the chicken I needed for the spicy chicken recipe and the fajitas and got it cooking.
I let everything cool before packaging it up to put in the freezer!
Tomorrow I'm going to put a pork roast in the crock pot to shred for carnitas for another meal!
So excited to see if everything freezes okay when we start taking the meals out!

Freezer Cooking

I've started my planning for my big day of cooking to stock my freezer!
I have written out the recipes I want to cook and made a list of ingredients I already have on hand. Then I wrote my list of ingredients I need to buy, I was going to go to the grocery store today, but didn't get over there...what else is new right?!?! So I'm going to the store tomorrow!
My goal is to start cooking on Wednesday and finish up on Thursday! I'm so excited to have meals on hand to make night time easier! :)
My recipes:
Meatloaf
Meatballs
seasoned ground beef for tacos
Shredded beef- enough for BBQ sandwiches one night, and shredded beef burritos another night
Shredded pork for carnitas
Spicy Chicken
Cooked chicken strips for stir fry
Cooked strips of steak for fajitas
chili
So that's 10 dinners to hold me over for about 2 weeks! We'll probably do some left overs and going out or take out for a few other nights. I'm so excited!
This will be my trial run. If everything works out well my plan is to do this once a month to keep work nights easy! Wish me luck!

So I've decided I want to try this whole freezer cooking idea! Most blogs I've read talk about getting meals ready for the freezer with a months worth of meals. I don't know if I could do that much at once so I'm thinking of starting smaller, like meals for 2 weeks. Has anyone else done this? How'd it go?
I'd like to start with seeing what's on sale and what coupons I have to determine my meals and obviously will use what I already have. I wonder if I could use up my 6 bottles of BBQ sauce, or my 4 bottles of mustard doing this?? J/K I'm not going to make condiment soup!!
I'm thinking I'm going to use this week to start my planning. Here are my goals for this week and next weekend. I hope to spend all of next Sunday cooking and prepping and getting everything ready to cook and freeze! This will be my trial run to see if I can handle it! If it works out I hope to be able to get this done again the weekend before I go back to work in July so we can have meals ready when I'm not going to want to cook after working all day!
So here's my plan:
1. Come up with ideas and recipes I'd like to make
2. Look through my pantry to see what ingredients I already have
3. Match up my stockpile items to the recipes and start a grocery list for what I will need to finish the ingredient list for each recipe
4. Match up all the prep work for each recipe (browning all the ground beef for a few of the recipes, chopping all onions needed for all recipes, etc.)
5. Get everything all ready to go by next weekend for the big cooking day!
Can you tell I'm getting really excited about this? Does anyone else have any suggestions? Who else does this?
I'm becoming such a "mom" and "housewife" lately! I'm all into couponing and saving at the grocery store and planning out menus to cook with all the food I've gotten with my savings, now I want to do big batches of cooking. It's kinda nice, I feel like I'm really taking care of my family! :)

So I have always wanted to try Bountiful Baskets and today I did! :)

Bountiful Baskets is a food co-op where you can get a lot of great fruits and vegetables for a great price! I wasn't sure if we would use all of the produce in time so for my first time I split a basket with a friend. I got the normal basket full of wonderful goodies as well as the Mexican Pack! Since I split everything with a friend it only cost me $12!! Can't get this much produce for that price anywhere!
I'm so excited to try a few new recipes with all of my wonderful goodies! The mexican pack had tomatillos, yellow onion, cilantro, cerrano peppers, avocados, limes, and garlic. I'll be making some salsa and guacomole today for sure!

Coupons!

I went to Safeway yesterday and saved $113, which was more than I spent!!
I am absolutely addicted to couponing and hunting for deals! I used to make a list of foods and things that I needed, and if I had a coupon or it was on sale, great! I don't do it that way anymore! I have joined several free blogs and websites to keep an eye on all the deals!
Most people use a binder to keep all of their coupons organized, but I honestly don't have the time to keep up with that. What I do, is have a file box and organize my coupons by date. Most coupon sites will give the date of the newspaper the coupons came in when they match sales with coupons, so then I can just go to that file in my box! I don't clip all the coupons when I get them, because I usually use maybe 40% of the coupons in each of the inserts. I rely mainly on online coupons to save money.
Something I learned when starting to coupon is that you can use a store coupon AND a manufacturer coupon on the same item! This is also true for a paper coupon and an ecoupon! This is the biggest way I save money!
The main stores I shop at are Albertson's and Safeway. Safeway has been having a lot of great deals lately, and Albertson's always has great deals on meats!

Foot surgery


So today was the day for my foot surgery.
We arrived at the Camp Lowell Surgery Center at 6:00 am this morning. I tried to convince Ben to ditch the surgery and get breakfast with me! Kinda felt like old times! My senior year of high school, I would ditch school and meet him at JB's for breakfast! Remember that restaurant? They had the best breakfast buffet!
Anyway, he wouldn't budge, so to check in we went. Everyone at the center was so nice and explained everything really well! Didn't help to calm my nerves though. After checking in, we waited about 30 minutes before they called me back, where they checked my vitals, had me sign paperwork and started an IV. I tend to have uncooperative veins so the nurse had to start the IV twice :( I don't do well with IV's and needles so I almost fainted after the 2nd one! After saying goodbye to Ben, they wheeled me back to the operating room.
I was "put to sleep" for a few minutes while they numbed my foot. Then they woke me up and I was awake for the whole surgery! I downloaded Pandora to my phone to listen to so I didn't hear any of the surgery. Unfortunately only one of the earphones was working so I heard everything! I heard the electric saw being used and everything! Ugh :(
The surgery lasted about an hour and we were home by 10:30 am. Where I then took a nap. When I woke up the numbing medicine started wearing off and man was there pain! My doctor was surprised to hear it became un-numb so quickly! Apparently I have a fast metabolism when it comes to medicine! The viccodin is not helping hardly at all so the doctor plans to write me a prescription for demoral in the morning! Man I hope it helps!
The plan was to do this foot today and then do the right foot in a few years. After all this I really don't think that is happening! Everyone told me it was going to be painful but I was never prepared for this!
Luckily my wonderful mother is watching my kids, but I really miss them! Can't wait to see them tomorrow!

Monday Blues

Is it possible to have the "Monday Blues" even when you're not working? Today I was so cranky and tired ALL day!! I should have been cleaning and folding laundry to get ready for my surgery on Wednesday, but I just couldn't get my butt moving! Today was also the first official day of my summer break so I should have been ecstatic!
I was feeling okay, tired, but okay before watching "Dear John" this afternoon! What a sad movie!! Can a movie really change your mood that much?
I'm sure hoping tomorrow is a better day!! I need to get my house cleaned before my surgery on Wednesday!! After the surgery I won't be able to walk for at least a week!

Addison


So I just have to say that I have the BEST baby in the world! She is always just so happy and goes with the flow. Her newest words/phrase is "I love you"! It is the cutest thing in the whole world. How can you possibly love something so much?!?!
She is still not walking yet. She turned 16 months yesterday. She does "cruise" on the furniture and will walk when you hold her hands, she just won't do it by herself, she's lil Miss Independent!

Consequences

What consequences can you really give an almost 5 year old? He loves watching Noggin, so that's always the first thing to go, next is going to bed early (which he hates), or we'll say no dessert after dinner. What else is there? We went to dinner with my Brother In Law, his wife and his kids at Sweet Tomatoes tonight, Aiden was awful! He was messing around so much he fell and smacked his face on the bottom of the high chair! I was so embarrassed! He went straight to bed when we went home which led to a huge screaming fit. We've gone through this before, he won't remember it next time. He NEVER listens to us! We tell him things over and over again and he never listens and I never know what an appropriate consequence is!
Parenting and discipline is the hardest thing in the world. No one can ever be prepared for this! Ugh...can't even imagine what's going to happen when Addison is this age, she's such a little princess now!

Worst mom and housewife ever!!

So I've been really slacking on all my duties lately! I'm just so tired all the time. How do other working moms do it?
I feel like I've forgotten to cook and everything else! I used to create a weekly menu, clip coupons, clean the house, cook at least 4-5 times a week, and now I hardly do any of it! :( I feel like such a failure! Thank goodness my hubby isn't working right now, we'd starve and live in filth!
Thank goodness summer is coming up! Maybe I'll relearn how to do it all again!

Prayers Needed!

So my mother in law has been having a very hard time with her health for the past few years. Unfortunately, she developed an infection in her heal sometime ago. It ended up untreated for too long and after 2 surgeries and several rounds of antibiotics she now has to have her foot amputated due to the infection getting into the bone :( All prayers would be helpful during this difficult time and long road ahead. I'm just amazed Ben is holding on as well as he is!

PROP 100

So everyone knows that I'm a teacher and obviously a supporter of Proposition 100, but I really hope everyone else is too! This TEMPORARY sales tax increase will help education so much in Arizona! I totally agree with the opposition that the government needs to seriously rethink the spending habits, but let's not teach them a lesson while destroying the educational system!! Did you know these facts??
If 100 doesn't pass the following will most likely happen!
K-12 schools - Cut $420 million
Higher education - Cut $100 million
Public Safety - Cut $85 million
13,000 prison inmates will be released
Police and firefighter response time will slow due to the $85 million cut on public safety
20,500 jobs will be lost
Arizona will lose an extra $442.5 million in federal funds

Don't know about you but I really don't want to have 13,000 inmates wandering around Arizona just because the government screwed up the budget!! Please make your voice heard!

Sundays

I love Sundays! It's the ONLY day my house is clean! LOL That and we get to just hang out and veg. Usually I feel guilty for not taking Aiden to the park or something during the day, but not today! The weather was awful! What's up with this weather? It's May! I hope it's not this windy all week! The weather is not helping Aiden's cough or cold!

3 more weeks until school is over! Can't wait for the summer so I can spend more time with my kids!! :)

Kids

Kids sure can be amazing sometimes! I took my 4 year old to a carnival tonight and he was so good! He wasn't feel well and told me, "mom, I think I'm done, I'd like to go home." I was so surprised! We even had 6 tickets left! You know a kid isn't feeling well when they willingly leave a carnival with 3 different jumping castles! Hope my poor guy feels better tomorrow!

Appreciation

How do we teach our kids to be grateful for what they have? I'm so afraid that my kids are going to grow up being greedy and ungrateful, especially in this new generation where it seems like kids have everything available at their fingertips! I love my 6th graders, but I am amazed at how greedy and ungrateful some of them can! This past week was a big fundraising week for our Relay for Life team at school. The members of our team had "torture buckets" in our classrooms. Students could bring in monetary donations and when the classed reach certain goals there would be a form of "torture" on the teacher. Well my students met the $75 goal and so I had to dye my hair pink. I used the hairspray dye and the can ran out before I was able to get ALL of my hair pink. Were the kids grateful that I dyed my hair at all? No! It was pink enough! Then they also were able to throw water balloons at me yesterday, were they grateful? No! I mean, come on! I can't remember any of my teachers doing things like that!

Am I being too hard on my students? Are my expectations set too high? I know Aiden is only 4 1/2 but I sure plan to make sure he understands he has to work for what he wants! He may not like it growing up, but he'll sure thank me when he's older!

Pedicure

So I was able to get a pedicure today! I was at a baby shower this morning and realized how UGLY my toes looked, especially compared to all the other women that were there! So I decided it had been too long since having a pedicure.
So I get there and then have to wait 45 minutes until my turn. Why is it that women always have to wait for everything?? Anyway, I sit in the chair and my phone rings. I try to grab my phone and drop it on the floor. I proceed to try to pick it up and almost fell out of the massage chair onto my face! Man! That would have been embarrassing!!
So I'm there TRYING to relax but I'm totally embarrassed and feeling guilty for getting a pedicure when my husband has been at home with the kids all morning. Why is it moms can never do anything for ourselves, and when we do we feel guilty for it? Does that just come with motherhood, instead of a paycheck we get guilt?!?! What's up with that? At least my toes now look pretty!

So I'm new to this whole blogging thing. Thought I'd check out what all the hype is about!
Any tips of the trade for me? What should I write about? Who'd want to know my thoughts anyway?
